Here are the secret recipes to my CakeStar cakes. Truth be told, I don't really like to bake, just decorate... So these recipes get me out of the kitchen faster and on to the fun part... Decorating!

There is a method to my madness. I use:
Boxed mixes- to save time and have a no fail method of making cakes
Egg Whites- I replace 2 of the 3 eggs with egg whites.
Apple Sauce- I replace the oil with a combination of applesauce and a small amount of oil- It's healthier and it gives a different texture and taste to the cakes and my cake eaters don't realize they are from a box

 

ButterCream Icing Recipe

1 Stick of Salted Butter- room temperature
1 Cup of Shortening- room temperature
1 tsp clear Vanilla flavoring
1 tsp butter flavoring
1/4 cup of water
1 package (2 lbs) of Domino's 10x confectionery sugar (do not use a generic version)

1. Cream the Shortening and butter together until they are evenly incorporated.
2. Add the liquid ingredients and stir more
3. Add in confectionery sugar and mix until it is all incorporated.

If you aren't using salted butter add salt to taste to take away the sharp sweetness of the icing.
I prefer to use to use a stand mixer. It will incorporate less air and make for a smoother icing.

Fruit and Applesauce Cake

Ingredients:
1. 1 package (18oz) of plain white cake mix
2. 1 package (10 oz) of any frozen fruit (with our without syrup), thawed and pureed
3. 1/2 cup applesauce
4. 2 large egg whites

What's Next:
Place all ingredients into a large mixing bowl. Once it's mixed well, place in the pan and bake at 350 degrees for about 30-35 minutes. Keep your eye on it to make sure it doesn't burn...

(I've only made this cake with frozen strawberries but it works so well I can't image other fruits wouldn't work. If you have fresh fruit you can use that as well just puree it up!)

Darn Good Chocolate Cake

Ingredients:
1. 1 Package (18oz) of Chocolate Cake Mix
2. 1 Package (4oz) sugar free instant pudding mix
3. 3 Egg Whites
4. 1 cup Lite sour cream
5. 1/2 cup water
6. * oil- Fill the 1/2 cup measuring instrument mostly full with applesauce, then add about 1-2 tsp of vegetable oil to fill in the rest.
7. package of chocolate chips

What to do:
1. Add ingredients 1,2,3,4,5 & 6 into a large mixing bowl and blend until it's combined. You may have to scrape down sides make sure all the dry is incorporated into the wet ingredients.
2. Fold in the chocolate chips (don't eat any)
3. Bake in a 350 degree oven. How long? Good question- the sides should start to pull away in about 40-50 minutes.
